APPLE FRITTER BITES

These little bites are crispy on the outside and soft on the inside, packed with sweet apple flavo

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ⅔ cup milk
  • 2 eggs
  • 1 tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples
  • 1 cup sugar (for cinnamon sugar mixture)
  • 1 – 2 tablespoons cinnamon (for cinnamon sugar mixture)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ¼ teaspoon vanilla extract (for glaze)

Preparation

  • Pour oil about 2 inches deep into an electric skillet and preheat to 375°F.
    In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt.
    Add milk, eggs, vanilla, and oil. Mix until smooth. Fold in diced apples evenly.
    Using a small or medium cookie scoop, drop spoonfuls of batter into the hot oil. Fry in small batches for about 5 minutes, flipping halfway, until golden brown.
    Remove fritters with a slotted spoon and drain on paper towels. Toss them in the cinnamon sugar mixture or coat with the powdered sugar glaze while still warm.
    Allow the glaze to set before serving. Enjoy warm!
